GLP-1 lunch ideas are something I’ve been thinking about more lately because lunch is honestly one of the easiest meals for me to forget about. Mornings are busy, then suddenly it’s the middle of the day and I realize I haven’t planned anything for myself.

And when I’m hungry and busy, the last thing I want to do is pull out five pans and follow a complicated recipe.

I need lunches that are simple, taste good, and use ingredients I can easily find at the grocery store. Even better if I can prep part of the meal ahead of time or turn leftovers into lunch the next day.

So for this list, I wanted to come up with GLP-1 lunch ideas that are different from the chicken bowls, turkey wraps, tuna bowls, and other recipes I’ve already shared. We’re changing things up with stuffed sweet potatoes, mini pizzas, soups, crunchy salads, lettuce cups, zucchini boats, and a few other easy ideas.

For me, lunch needs to pass a pretty simple test:

Will I actually make it on a busy Tuesday?

If the answer is no, it probably isn’t going into my regular rotation.

I usually start with a protein-containing food and then add vegetables, fruit, whole grains, beans, or other foods depending on what I’m making.

1. Chicken Caprese Stuffed Avocado

Instead of making another chicken bowl, try stuffing an avocado.

Mix chopped cooked chicken with diced tomatoes and a little fresh mozzarella. Spoon the mixture into half an avocado and add fresh basil and a drizzle of balsamic glaze.

It’s fresh, easy, and doesn’t require much cooking if your chicken is already prepared.

For a little extra crunch, serve cucumber slices on the side.


2. Turkey Taco Stuffed Sweet Potato

This one is perfect for using leftover taco meat.

Cook a small sweet potato until soft, cut it open, and add seasoned lean ground turkey.

Top it with salsa, avocado, chopped tomatoes, and a little plain Greek yogurt or shredded cheese.

I love meals like this because I can make the sweet potatoes ahead and simply reheat one at lunchtime.

Yes, we’re having pizza for lunch.

You still get that spicy buffalo-chicken flavor, but the whole meal takes only a few minutes if your chicken is already cooked.

Lentils are such an easy pantry ingredient to forget about.

Combine cooked lentils with cucumber, tomatoes, bell pepper, parsley, and feta.

Soup doesn’t have to be an all-day project.

Combine cooked shredded chicken, white beans, carrots, celery, spinach, and broth.

Add garlic, herbs, and black pepper.

Let everything simmer until the vegetables are tender.

Make a pot for dinner and save a portion for lunch the next day. I love recipes that quietly solve two meals at once.

Here’s a different way to make egg salad.
